Does anyone know of a genuine knife sharpening guy in Orange County? Not some joker that just slaps it against a belt sander and says "here ya go, that'll be $10." Someone who really knows what he's doing?

The key to a sharp edge is to "roll" the edge along the entire blade, first on one side then on the other before moving on to the next stone. The difficult part is to maintain the same angle as you work through the stones. I am able to to do a razor's edge, but that does you no good down there.
