I expect you are more likely to shoot your support hand (or bystanders) when cross-drawing under adrenalin pressure than to need to draw with your support hand. But to each his/her own.

A little known fact (which I believe is true because I heard it from someone I trust) is that in the old west, with gunslingers wearing two guns, the only time they drew both and shot both with each hand was in Hollywood movies.

The truth is that they'd wear two guns since reloading a wheel gun is not exactly very fast. So if their stong side, first choice gun went empty and they needed a second gun, they would draw it, and transfer it to their dominant hand to continue shooting.

The two guns blazing at the same time is mostly a theatrical device for movies... it looks great on film.... it's rather difficult in real life...

As for which side one carries on, remember the concept is to be able to draw and fire (on target of course) as quickly as possible while maintaining gun control (rather control of your gun), and NOT to muzzle innocent bystanders cross-drawing. While I think we should all train to fire with each hand, carrying on the side of your dominant hand is always a faster draw with less risk. Too bad most holsters are canted, as a straight drop is also a faster draw, even through it's not quite as comfortable to carry if you sit down a lot. FBI gets to draw their gun before they enter a premises or engage an incident, us CCWs don't get to do that, so we need to be prepared for the fastest MOST CONTROLLED draw-and-fire in case we need to defend our lives.

To me "strong-side" carry means you keep the gun on your dominant hand side, usually in a waistband/hip holster (but it could be in a pocket), butt facing to the back. Weak-side carry means the gun is on your non-dominant hand side, butt facing forward. This is sometimes referred to as "cross-draw." In either case, you can quickly draw the gun with your dominant hand and bring it into play.

Weak-side/cross draw is a reasonable option for carrying while seat-belted in a car...It's also useful with a shoulder rig or when carrying with a CC vest or jacket (e.g. Coronado Leather).

Every once in a while in our IDPA matches someone will make a scenario that you have to draw and fire your gun with you weak hand.
It is always interesting to do and interesting to watch what others do.
Just the physical requirements to safely draw your gun from your strong side with your weak hand is something that requires effort and practice.
It would behove anyone that has not done this to try it as dry practice at home.
It can be done very safely and quickly but not if you haven't done some practice at home.
