I think that's the intention, but they usually end up being installed for the psychological deterrent factor and the imaginary safety they provide the patrons and employees. Oh, and for the insurance companies.
But like most security, it rarely gets used properly. I suppose if you were wearing a ski mask and holding a shotgun, they might decline to let you out.
Humorous note: I've seen several of these where the mantrap was installed with standard glass (not tempered or bullet-resistant) doors, presumably to save costs.
